Anna M. Mangin: Invented the Pastry Fork in 1891

For all those who love baking, but want the tasks to be made as easy as possible, you have Anna M. Mangin to thank for her ability to foresee your needs. The young African American woman invented the pastry fork in 1891.

The utensil was used to mix dough for pie crusts, cookies, butter and flour pastries without needing to physically manipulate the ingredients with one’s hands. However, the fork was also used to beat eggs, mash potatoes, and prepare salad dressings. Anna M. Mangin was awarded a patent on March 1, 1892, for the pastry fork for mixing pastry dough.

    She didn’t invent the pastry fork, she came up w/ what she blvd was an improved design.
    In her application she says, “Be it known that I, ANNA M. MANGIN, of Woodside, in the county of Queens and State of New York, have invented certain new and useful Improvements in Pastry-Forks . . . ”
    She further says, “I am aware that batter-mixers consisting of several long parallel separated (except at the ends) straight tines are old; but I do not claim such devices, as they could not possibly be used for my purpose for cutting and pulverizing, as described.”

    When the dough is kneaded more than it should, the dough rises steadily. But when it is lightly kneaded with a fork or wooden spoon, the dough rises quicker.
